Beef Tenderloin with Blue Cheese Sauce

Beef Tenderloin TipsAs always preheat your grill . Then grab your tenderloin and pat your meat with a nice thick coat of olive oil.  You then want to season with the SEASONED SALT (or 4/S or FORWARD), PEPPER and GARLIC.

Grill for 20 minutes on high heat and then check with a meat thermometer. After the temperature reaches 125° in a couple places it is medium-rare. Remove from the grill and let rest for 10-20 minutes.

While the meat rests, combine the blue cheese, mayonnaise and/or sour cream, lemon zest, salt and PEPPER in a bowl and mash to combine. Slice the beef and serve with the sauce on the side.

Here are the ingredients for the bleu cheese:

Blue Cheese Sauce:

  • 4 oz. blue cheese, crumbled
  • 1/2 Cup mayonnaise
  • 1/2 Cup sour cream (or use all of one or the other if you prefer)1 TB.
  • freshly grated lemon zest (zest of 1 lemon) or 1 tsp. MINCED LEMON PEEL re-hydrated in 1 TB. water
  • 1/8-1/4 tsp. salt (to taste)
  • freshly ground pepper

Cooking time: 20-25 minutes
Serves: 10-12
